@alex94: I think that it’s just a matter of personal preference and it might even depend on what you are serving it with. I mix mine up in a food processor. I use a cup of parsley, ¼ cup oregano leaves (or cilantro), ½ cup olive oil, ¼ cup red wine vinegar, 3 cloves garlic, 1 tsp. red pepper flakes, 1/2 tsp. ground cumin, 1 Tbsp. shallot (minced), and salt to taste.
Right before time to serve it, I put all of the ingredients in my food processor and process until smooth. The sauce is then served at room temperature.
